Lima, September 2024.- As the Peruvian Gastronomy Week approaches, celebrated every second week of September, Páprika -the restaurant of the Costa del Sol hotel chain- presents a special menu as a tribute to Peruvian cuisine, featuring a variety of typical dishes according to the region of each hotel.

As a reminder, Peruvian Gastronomy Week pays tribute to the richness and diversity of Peruvian cuisine, one of the most renowned worldwide, which has also emerged as a key economic pillar, generating close to $200 million in revenue and providing employment to approximately two million people, according to PromPerú.

“This occasion not only celebrates the growth of our gastronomy but also the richness of a tradition that blends indigenous, Spanish, African, Asian, and European influences. Lomo Saltado – Lima

Lomo saltado, a dish born from the fusion of Chinese and Peruvian cuisine, is now an icon of Lima’s gastronomy. “At Paprika, we prepare it following the traditional stir-fry technique in a wok, combined with local ingredients like yellow chili and red onion, to offer a dish that celebrates the cultural diversity of Peru’s capital,” added Felipe Campos, chef of Páprika Lima City.

Rocoto Relleno and Chupe de Camarones – Arequipa

Rocoto relleno and chupe de camarones are symbols of Arequipa’s cuisine. Rocoto relleno, on one hand, reflects the history and tradition of this region. This chili, cultivated since pre-Hispanic times, becomes the star of a recipe that combines Andean flavors with techniques introduced by Spanish colonizers.

Chupe de camarones, on the other hand, has its roots in the fusion of indigenous and Spanish traditions. Prepared with river shrimp and other local ingredients, it is a true showcase of Arequipa’s land. “At Páprika, we have maintained the authenticity of both dishes, respecting their traditional preparation and preserving their unique essence and flavors,” mentioned Campos.

Arroz con Pato – Chiclayo

Chiclayo’s arroz con pato, with its characteristic green color from cilantro and unique flavor from chicha de jora, is a dish that has transcended generations. “We have preserved the traditional recipe, using ancestral ingredients that connect diners with Lambayeque’s culture,” said chef Felipe Campos.

Ceviche – Lima

Ceviche, Peru’s flagship dish, combines fresh fish marinated in “leche de tigre” with lime, red onion, and cilantro. It is served with sweet potato, corn, and toasted corn (canchita), offering a balance of citrus, spicy, and sweet flavors. It reflects Peru’s cultural richness and biodiversity.
